Pazham Pori Recipe
Pazham Pori (also known as Ethakka Appam) is a popular tea-time snack from Kerala, made with ripe bananas (usually Nendran bananas) dipped in a sweet batter and deep-fried to golden perfection. Here's a simple recipe:

Ingredients:
- 2 ripe Nendran bananas (or any firm, ripe banana)
- 1 cup all-purpose flour (maida)
- 2 tbsp rice flour (for crispiness)
- 2 tbsp sugar (adjust to taste)
- A pinch of salt
- A pinch of turmeric powder (optional, for color)
- 1/4 tsp cardamom powder (optional, for extra flavor)
- Water, as required (to make the batter)
- Oil, for deep frying
Instructions:
Prepare the Bananas:
- Peel the ripe bananas and slice them lengthwise into thin strips (about 2-3 pieces per banana).
Make the Batter:
- In a mixing bowl, combine the all-purpose flour, rice flour, sugar, salt, turmeric powder, and cardamom powder (if using).
- Gradually add water to form a thick, smooth batter. The batter should coat the banana slices without dripping too much.
Heat the Oil:
- Heat oil in a deep pan or kadai over medium heat for deep frying.
Dip and Fry:
- Dip each banana slice into the batter, making sure it's coated evenly.
- Gently slide the coated banana slices into the hot oil.
- Fry them until they turn golden brown and crispy on both sides. This will take around 3-4 minutes per batch.
- Remove from the oil using a slotted spoon and drain on a paper towel to remove excess oil.
Serve:
- Serve Pazham Pori hot with tea or coffee.
Tips:
- Use ripe Nendran bananas for authentic taste. They have a firm texture that holds up well when fried.
- Rice flour helps make the coating crispier, so don't skip it if possible.
- For an extra touch of sweetness, sprinkle a bit of powdered sugar over the fried Pazham Pori before serving.
