Sambar with Drumstick

SAMBAR WITH DRUMSTICK

Sambar is a traditional lentil-based vegetable stew or chowder, cooked with dal, tamarind rich in taste and filled with a bunch of vitamins and minerals and is one of the favorite stew of every Keralite. To add to its delicacy and taste, the healthy and nutritious element of Drum Sticks dominate its taste further to another level. Always in small parties and get-together in Kerala, sambar and idli is considered as a perfect combination and loved by all. The elegance of curry leaves further adds to its taste as tadka in the end. Keralites' wherever they stay they will prepare Sambar at least once in a week. It is a nostalgic food item for Malayalees. Kerala's coconut adds natural taste to this delicious Sambar. Sambar with idli and rice is considered a basic combination. Now we may see how to make sambar with drumstick for your lunch.

Ingredients to be added:

(a)Ingredients to boil in Pressure Cooker Ingredients Measurement Toor dal Half Cup Turmeric Powder Half tbsp Water As per Need one or two cups for boiling

(b) Ingredients to Heat in a Pan & Wet Grind in Mixer Grinder Ingredients Measurement Small onion 04 Nos. Chopped Grated Coconut 01 cup Dhaniya (Coriander) Powder 02 Tbsp Jeera Powder ½ Tbsp Chilly Powder 01 Tbsp Tamarind 2 pieces (mix in water and add to the grinded paste) Water as needed to make a smooth paste of all above ingredients

(c)Ingredients to boil in a Kadai (all above items to chopped into medium size) Ingredients Measurement Potato 01 No. Tomato 01 No. Carrot 01 No. Big onion 01 No Garlic 05 Petals Drum stick 02 Nos. Ladyfinger 04 Nos. Salt 01 Tbsp Fenugreek 01 tbps Hing 1/2 Tbsp

(d) To give tadka at the end Ingredients Measurement Oil 02 tbsp Rai 01 tbsp Curry leaves 05 leaves

Go to the Preparation:

(a) Boil Toor dal in a pressure cooker by adding 2 cups of water, Turmeric powder and Salt. (b) Add Grated coconut -1 cup || Dhaniya powder-02 tbsp || Chilly powder-01 tbsp || Jeera - 1/2 tbsp are to be heated in kadai, stir it properly till becomes light red and remove it from stove and let it cool. After cooling, grind it to smooth paste by adding ¼ cup water and also add Tamarind to make thick paste and keep aside. (c) Chopped vegetables alongwith, turmeric powder - 1/2 tbsp, Fenugreek -01 tbsp(uluva-methi), Hing-1/4 tbsp, add salt as required. Add all the above items into a kadai to boil with 2 cups of water. After boiling for about 8 minutes, add the grinded paste of coconut into it and mix well. Also add boiled dal and mix again and keep to boil for another 10 minutes in medium flame. (d) Add some oil into a small pan and heat it in medium flame also add some rai and some curry leaves in it and make tadka and add it to the sambar to make the sambar more delicious. Sambar is known for its rich qualities, use it with rice or idli.
