Chole Bhature

 


Chole Bhature is a very tasty dish, the togetherness of Chole (big white grams) with Maida or Atta makes this dish almost delicious and brisk Almost all the people in the country prepare this delicious item for breakfast or evening snacks.  plenty of restaurants regularly making Chole Bhature as their premier food item. 

 

Chole Bhature is most famous in the Northern, North West, North East and Central and Western parts of the country.  This is mainly known as Punjabi dish.

 

The Maida(Refined flour) is mixed with water, pinch of baking powder and salt and keep aside for fermentation. 

 

White grams are used for preparing chole masala curry.

INGREDIENTS

 

CHOLE MASALA

BHATURE

      White grams (kabuli chana) soaked overnight and drained 1 cup

      Tea bags 2

      Salt to taste

      Ghee 2 tablespoons

      Cumin seeds 1 teaspoon

      Green chillies slit 2

      Ginger-green chilli paste 1 tablespoon

      Coriander powder 1 tablespoon

      Cumin powder ½ teaspoon

      Red chilli powder 1 teaspoon

      Chole masala 1 teaspoon

      Dried mango powder ½ teaspoon

      Dried pomegranate seeds (anardana) roasted and coarsely crushed 1 tablespoon

      Garam masala powder 1 teaspoon

      Fresh coriander sprigs for garnishing

 

      Refined flour (maida) 2½ cups

      Baking powder ½ teaspoon

      Baking soda a pinch

      Salt to taste

      Powdered sugar 2 teaspoons

      Yogurt ½ cup

      Oil 1 tablespoon + for greasing and to deep fry

 

 

Method of Preparation of Chole

Take white grams in a big bowl and add 2 cups of water on the previous day night for softening the white grams.

In a Pressure Cooker of medium size on the next day also add some water say 3-4 cups or as needed to cook the chole (white grams) alone add required salt or say ½ tbsp.

Keep it to boil for 3-4 whistles in the Cooker.

Turn off the gas flame and keep it aside.

Prepare the Masala in a bowl with chili powder, black pepper powder, coriander powder and add haldi(turmeric) into it and make a paste.

Place a Kadai and heat it up and add 2 tbsp oil when oil is heated add rai and jeera into it, you can use Non-stick Tawa also for preparation.

Add tomatoes and Onion paste into it.

Add prepared Ginger paste and prepared Masalas’ .

Add cut green chillies for taste.

Add stock of chole (Kabooli White grams)

Saute it well.

Boilt it for 8-10 minutes.

Switch off the flame.

 

How to prepare Bhature

In the morning Knead the whole wheat flour, maida and salt together with adequate amount of water.

Sprinkle the yeast on top. Leave it for 2-3 hours for the yeast to work.

Divide it into equal portions. Roll out in an oval or round shape.

Deep fry till golden brown, like a puri.

Serve.
