MOLAKUSHYAM

Pumpkin well known for its Vitamin C richness and is considered as best vegetable. The pumpkins are used in making vegetable curry in Kerala. Pumpkin seeds are also good nutrient and rich in zinc in its shell as well as seed. In Kerala most people use this vegetable for making variety of items. One such item is Pumpkin Curry (Molakushyam) prepared with Coconut i.e. Molakushyam.

Main Ingredients :-

  • Pumpkin - 250 gms.
  • Split chickpeas or chana dal : 1/2 cup
  • Grated Coconut - 1 cup (3/4 cup for grinding and 1/4 cup for making tadka.
  • green chilli - 04 nos. medium size
  • Jeera - 01 tbsp
  • Garlic - 04 Nos.
  • Haldi Powder - 1 tbsp
  • Salt - for taste
  • First Procedure:-

  • Boil Split chickpeas or chana dal in a pressure cooker by adding 2 cup water or add water as required. Add Garlic and Turmeric powder.
  • Second Procedure :-

  • Add Pumpkin cut pieces to the Boiled split chickpeas and add prepared paste of 3/4 cup Coconut, green chilli and Jeera.
  • Third Procedure:-

  • Add grated coconut 1/4 cup in a pan and fry it in medium flame and add this also to the Mulakushyam boiling in the pressure cooker.
  • Fourth Procedure:-

  • Boil it for another 7-10 minutes. Your Kerala style Mulakushyam is ready to use. Remove it from the stove and serve it hot with steamed rice.
